		<description>The reason the French have so many sauces is that they covered the taste of the meat when it was starting to go wonky. For a Frenchman to waste meat was like trying to rip a penny from the hands of a Scotsman. That&#039;s how copper wire was invented. 

The French do, however, like their meat a bit -- &quot;aged&quot;. I have dined on chicken in a French home which was intentionally aged by hanging. The wife hung it (already killed, by the way) by its neck in the basement and each day she gave it a little tug on the feet. When the head and body separated, she cooked the chicken. Tasted quite good, really. It&#039;s those French sauces that do the trick. ;-)

Not for me, I cook as fresh as possible or freeze or can it immediately, as I have no facility to safely dry age the meat.</description>
