		<description>While not quite vegan myself (eggs are consumed in this house, we call it our regular dose of Cholesterol) I&#039;m very close to being one. However, I have found that being &quot;judgmental&quot; about it just made the carnivores in my vicinity even more defensive.

		<description>I remember making saitan last year during my daughter&#039;s quest to convert me to veganism (didn&#039;t work -- for one thing, she decided she couldn&#039;t make it through Sunday without my ham-&#039;N-veggie omelet, for another, it turns out that inhabitants of Vega IV  LIKE human consomme) (but that&#039;s another story).  

I found it very flavorful and enjoyable.  You should also know that it&#039;s pronounced &quot;say-TAN&quot;, like a particular demonic entity trying to sound fancy.  I got raised eyebrows from my religious friends and comments like, &quot;Oh? And you served it with brown rice Ba&#039;als, did you?&quot;</description>
